#1 – Easy Chicken Faijtas.

Ingredients:

5 oz. chicken breast ¼ tsp. onion powder ¼ tsp. garlic powder ¼ tsp. chili powder ¼ tsp. cumin powder ¼ medium red bell pepper ¼ medium yellow bell pepper ¼ medium green bell pepper 1 tsp. extra virgin olive oil ½ Tbsp. parsley 1 Tbsp. lemon juice 2 small whole wheat tortillas (optional) 2 Tbsp. sour cream (optional) salt & pepper.

#2 – Low Carb Mexican Cauiflower Rice.

Ingredients:

5 oz. ground chicken Or turkey 3 oz. riced cauliflower ¼ medium red bell pepper ¼ medium green bell pepper ¼ medium red onion 1 tsp. extra virgin olive oil ¼ tsp. cumin powder ¼ tsp. garlic powder ¼ tsp. paprika powder 1 pinch chili powder 1 tsp. tomato paste 1 Tbsp. water 1/2 Tbsp. parsley salt & pepper.

Ingredients:

1 medium carrot ¼ medium red bell pepper ¼ medium red onion 1 Tbsp. cottage cheese 1 Tbsp. greek yogurt 1 Tbsp. dijon mustard 1 whole wheat tortilla wrap 1 oz. spinach 1 Tbsp. pumpkin seeds salt & pepper.

Ingredients:

¾ cup canned or cooked chickpeas 2 oz. spinach 3 basil leaves 1 clove garlic 1 Tbsp. parmesan cheese 1 tsp. extra virgin olive oil ¼ medium red onion 2 Tbsp. water 2 Tbsp. lemon juice 5 grape tomatoes 5 kalamata olives salt & pepper.

#1 – Shrimp With Broccoli.

Ingredients:

5 oz. peeled & deveined shrimp 5 oz. broccoli florets ¼ medium yellow onion 1tsp. extra virgin olive oil ¼ tsp. garlic powder ½ Tbsp. low sodium soy sauce salt & pepper.

#2 – Easy Egg Salad.

Ingredients:

2 cooled, hardboiled eggs 1Tbsp. red onion 1Tbsp. greek yogurt ½ tsp. dijon mustard spinach leaves 2 slices whole wheat toast bread (optional) salt & pepper.
